In these times we are a bit more willing to be open about spirituality. There are many toasts that use a more generic sense of spirituality as opposed to defining exactly what that means for any particular group. It is likely that a sincere spiritual toast will not only be well-received but will be uplifting for those sharing in it with you.

May the Lord love us, but not call us too soon.
